Founded in the year 2000 by a visionary group of just seven producers, FUDAM has since blossomed into a 300-member strong community committed to Fair Trade and Organic farming practices, as well as the Rainforest Alliance Certification.
What sets FUDAM apart is not just its commitment to sustainability, but its unique terroir. Unlike traditional coffee-growing regions where farms are perched atop hills, FUDAM's farms lie in lower elevations, cocooned by towering peaks and rugged terrain. This distinctive geography infuses our coffee beans with a flavor profile that's as bold and rugged as the land itself.
This specific lot is nurtured by FUDAM's own Manos de Mujeres, a subgroup of passionate women farmers who embody the essence of resilience and determination. Their dedication to organic farming is unwavering, driven not by trends but by a deeply rooted connection to the land and their values.
Each batch of FUDAM Manos de Mujeres coffee is a labor of love. Handpicked during the day, the cherries undergo a meticulous depulping process in the afternoon before being left to ferment for 16-24 hours, enhancing their rich flavors. The beans are then meticulously washed two or three times, ensuring purity and clarity in every sip.
Drying is an art form at FUDAM. Whether it's through traditional "casa elbas," mechanical dryers, or parabolic dryers, the beans are carefully nurtured until they reach optimal moisture levels. Mechanical drying can take anywhere from 25 to 40 hours, while other methods may extend up to 15 days, allowing the flavors to develop gradually, resulting in a cup that's nothing short of extraordinary.
